Gerson Mora [Red Bourbon Advanced Washed]

This exceptional coffee comes from the Villa Pastora farm, located at an altitude of 1,680 meters in the municipality of Palestina, in the heart of Colombia’s Huila department. A true family legacy, this estate was founded by Mrs. Pastora Anacona, who passed on her passion and coffee-growing heritage to her family. Now represented by Gerson Mora, representing the third and fourth generations, the family farm has evolved into a thriving entrepreneurial hub dedicated to specialty coffee since the 2000s.

This Bourbon Rouge undergoes a meticulous and highly precise processing. The coffee is prepared using the washed method, beginning with an initial thermal oxidation for 60 hours at 50 °C, followed by a long, 92-hour anaerobic dry fermentation. Careful drying—either sun-dried or mechanically dried, depending on weather conditions—completes this masterful process.

This complex and meticulously controlled process brings out the unique character of this bean, offering incredibly rich and floral aromatic notes of violet, raspberry milkshake, and tropical fruits on the palate.
