The Surma vineyard, part of Lot 26/E22, benefits from a high-altitude terroir that promotes slow ripening of the cherries and yields a beautiful aromatic complexity.

The semi-anaerobic method involves controlling part of the fermentation process in an oxygen-poor environment. This technique highlights the coffee’s natural potential without masking its identity. It imparts greater depth, a silkier texture, and a distinct fruity character.
