Finca Milan [NG]

At Finca Milan, innovation is not an end in itself. Each fermentation protocol is developed to bring out the potential that is already there. NG coffee—short for New Generation—is a perfect example of this concept.

Located in the Risaralda region, the farm is now recognized as one of Colombia’s leading examples of precision fermentation. Culturing protocols are developed there and are based on a thorough understanding of microbiology in order to achieve distinct and complex flavor profiles.

For this NG lot, the cherries are harvested at full ripeness and pulped. Fermentation is then carried out using a selected culture of yeasts and bacteria developed directly on the farm. This culture is maintained using a substrate composed of local fruits, aromatic plants, and spices, which helps guide the fermentation process without compromising the coffee’s unique identity. Depending on harvest conditions, this stage generally lasts between 5 and 10 days before washing and a slow, controlled drying process.

This NG captivates with its aromatic finesse. The initial notes evoke orange blossom and rose water, before giving way to fresh, juicy raspberry. The cup is delicate, floral, and particularly graceful.
