Cafec Flower Dripper Recipe – Our Daily Standard

This is our reference recipe for all our coffees, requiring precision and mastery of pouring. The use of a gooseneck kettle is essential for optimal extraction control. This method is also employed during our quality control sessions. By adjusting the infusion times between pours, we modulate the coffee's sweetness, thereby refining the balance of flavors.

Preparation

Begin by positioning a paper Filter in the dripper. We recommend Cafec Abaca+ or Cafec Medium Roast T-90 filters for better extraction uniformity. Then, rinse the Filter with hot water to eliminate any paper residue and preheat both the dripper and the Coffee Server. Place the dripper on your Coffee Server, then set the entire assembly on a scale. Add 12g of ground coffee (consistency: table salt texture), then start the timer.

Infusion

Pour 50g of hot water at 92°C in regular circles approximately 10 cm above the coffee bed. This first phase, called "blooming," allows the coffee to degas and fully release its aromas.

Then make successive pours:

At 30 seconds: add water up to 100g.
At 1:00 minute: continue up to 150g.
At 1:30 minute: finalize by reaching a total of 200g of water.
Maintain a controlled and homogeneous pour to avoid disturbing the extraction.


Extraction

The water should flow smoothly, without excessive stagnation. The goal is to achieve a total extraction time of between 2:15 and 2:30 minutes, as the last drops fall from the dripper.

💡 Adjustments:

If your coffee is too strong, opt for a coarser Grind Type.
You can double the proportions to prepare coffee for two people while maintaining the same extraction principles.
