Antonia Gomez [Maragogype Natural]

This natural anaerobic Maragogype comes from the Emiliano Zapata indigenous community, located in the El Triunfo Biosphere Reserve, in the heart of the Sierra Madre of Chiapas, Mexico. This rare nanolot is produced by Doña Antonia Gómez, a respected figure in the Tzeltal community, who cultivates just over two hectares of coffee between 1,600 and 1,900 meters above sea level. Each year, she harvests around 450 kg of Maragogype Criollo, a traditional cultivar with Whole Beans that is in danger of extinction, which Beneficio Edelmira is actively working to preserve.

This lot is part of an initiative led by Beneficio Edelmira, a micro-mill working with 35 small farms in the El Triunfo buffer zone. Their mission is to preserve heirloom varieties by encouraging producers to separate and promote their best cultivars. During post-harvest evaluations, Doña Antonia's Maragogype stood out for its aromatic purity and intensely fruity profile, justifying its selection as an exclusive nano-lot and its separation for premium micro-production.

The processing is carried out with exemplary rigor. The cherries, picked at 23° Brix, are sorted and then delivered to the micromill every evening. There, they are washed and placed in airtight GrainPro bags for anaerobic fermentation for 60 to 72 hours at 22°C. They are then slowly dried for 20 days on partially shaded African beds until they reach 11% moisture content.

In the cup, this Maragogype reveals a lively and refined expression, carried by a bright acidity and natural sweetness. Its aromatic profile revolves around notes of redcurrant, raspberry, passion fruit, and cocoa bean, offering a fruity, tropical, and elegantly structured cup. A rare and delicate coffee, reflecting the meticulous expertise of Doña Antonia Gómez and Beneficio Edelmira's commitment to preserving the ancestral cultivars of Chiapas.
